Tallow: Rendering, Uses and Storage

One of our best selling products is our grass-fed beef tallow, or rendered fat, otherwise known as lard. Enjoy the many healthy benefits of cancer-fighting CLA, Vitamin K2, and heart-healthy omega 3's while cooking with grass-fed beef tallow. Over the years we have been asked a lot of questions about tallow, so we thought we would put together a blog post explaining the rendering process, the color variations, the many uses of tallow, and recommended storage.

Rendering Process:

We use the same methods as the pioneers in the 1800's. The tallow is brought to a simmer for approximately 8-10 hours to evaporate the water from the raw suet in order to produce tallow. Simmer temperature is approximately 180-200 degrees F.

Color Variations:

There are many factors that influence the color of the end product: the age and weight of the animal at slaughter, the type and quality of forage they are consuming – which will be influenced by the weather, rendering process, etc. While our tallow is generally white in color, it will vary from batch to batch. Since we don’t use any food dyes, variances in color between batches is normal. It has not been bleached, deodorized, hydrogenated or altered.

-          Baking - makes a delectable pie crust

-          Flavoring - great addition to ground beef and vegetable dishes

-          Creating your own pemmican

-          Making soaps and candles


As far as storage, the USDA requires the frozen sticker because we do not use preservatives or additives. The container can sit on the pantry shelf unrefrigerated for a month without issue. At some point, the surface will begin to oxidize. Since the tallow is not highly perishable, it just comes down to personal preference for storage. A lot of our customers opt to keep it in the fridge, while others that use it more frequently, may leave it on the kitchen counter covered and out of direct sunlight. For long-term storage, we recommend dividing the tallow into smaller containers for freezing. It will keep for years in the freezer and months in the refrigerator.

13th Annual Weston A. Price Conference

Another successful Weston A. Price Conference is in the books. We had a great time in beautiful Santa Clara, CA. Thank you to all who stopped by our booth to meet us, learn about US Wellness Meats, pick up some samples, and purchase some of our grass-fed selections.

 Why we love the WAPF Conference:

 image- We get to meet the customers we talk to on a daily basis, and also introduce US Wellness Meats to those who haven't heard of us! Being an online company, our only interaction with our customers is over the phone. It’s always a pleasure meeting everyone at the conference. Some faces we recognize from past years and some are new. We are so appreciative of everyone’s support and patronage throughout the years. We wouldn’t be where we are today without our loyal customers.

- We get to see our blogger and wholesale friends! Thank you to all of our Price and Paleo friends who stopped by our booth. This year there were a few new faces. We were so pleased to meet Stan Fishman, author of Tender Grassfed Meat and Tender Grassfed Barbecue. Stan is also our November featured chef. We also saw some familiar faces: Hayley and Bill from Food Lovers Primal Palate, Michelle from Nom Nom Paleo, Diane from Balanced Bites, Laura from Ancestralize Me, Caitlin from Grass Fed Girl, and many more. Some of our wholesale customers stopped by to say hello as well. Thank you to Dr. Roger Trubey from The Old Country Store and our friends from It was also great to see Chaffin Family Orchards and our Vital Choice family. We enjoyed talking to each and every one of you.

- We get to provide samples of some of our grass-fed, nutrient-dense products! Every year we take a variety of products for sampling, this year was no different. We distributed samples of some of our best selling snack selections: beef snack sticks, jerky, and pemmican. We also sampled some nutrient-dense organ meats that are favorites at every conference we attend: beef liverwurst, braunschweiger, and head cheese

Let the Drooling Begin...

At the 2012 Ancestral Health Symposium, we had the pleasure of meeting Rick and Christine from Eating Evolved. Founded in 2012, Eating Evolved has set out to handcraft delicious truffles with organic, simple, and nutritious ingredients. Rick and Christine agree, and so they created bacon truffles. Bacon Truffles:

US Wellness Meats produces the best bacon in the world, so naturally we needed to use it in our truffles! Even before founding Eating Evolved we were long time fans of the sugar-free pork bacon, which we discovered through the Whole 30 program. Our bacon flavor was actually the first flavor we created. We all know that bacon makes everything better, so we just knew that the salty/sweet combination would be perfect.

We have had a blast watching people try our bacon truffles for the first time. Most people have never experienced bacon and chocolate together and are sometimes skeptical. After their first bite though it's as if they've had a religious experience. The most common phrase uttered after trying them for the first time? Something along the lines of a low-pitched and guttural, "Oh my God, that's incredible".

Why Order Minimums?

ShippingIn a recent blog post we asked for your feedback, and want to thank everyone who participated!  As many of you  know, we recently celebrated 12 years in business, and over that time many things have changed and updated, but many are still the same.  Each anniversary causes us to take a look back and see what needs to be improved on in the upcoming year.  We thank you for all of your responses!

We received many questions and comments about our order requirements.  We currently have a seven pound and $75.00 order minimum.  Shipping is always free and there is a $7.50 handling fee on every order, regardless of size.


First - we want to make sure every order is still frozen solid upon delivery.  Nobody wants to receive a box of thawed meat; therefore, we had to have some sort of weight minimum in place.  We have found that very light orders are the most prone to thawing, regardless of the amount of gel or dry ice in the cooler.  Seven pounds seems to be the magic number - anything less than that seriously increases the risk of thawing during transit, so that is why we have a weight minimum.  The more weight in the box, the better everything stays frozen. 

Second - we like free shipping.  When we order online from various sites, one of the most depressing feelings is thinking we have found a great deal, then we get to the final screen and find ourselves hit with an astronomical shipping charge.  We didn't want to do that to our customers.  So, our shipping costs are built into the price of our products.  We don't charge anything extra for shipping, even to Alaska and Hawaii.

Third - since we have built the price of shipping into our products, we have to make sure we are not losing money along the way.  We have a great relationship with FedEx, and the more weight in the box, the more economical it is for us to ship.  Not only are light orders more prone to thawing, they are also much more expensive for us to ship - especially since many of our shipments arrive via overnight service. 

But why a handling fee?

Every order incurs a one-time per an order handling fee of $7.50. This amount helps offset the handling fee charged by our packing crew to prepare each box for shipping, the cost of the shipping cooler and all packing materials.  Our company does not make a penny on the handling fee (it actually costs us more than what we charge you).  Even if your order is large and requires multiple boxes, you still will only be charged the $7.50 handling fee one time per an entire order.

Hopefully this helps explain why we do things the way we do!  We realize that many of our customers have small freezers or limited storage space and seven pounds seems like way too much to store so we want to share a few minimum order suggestions:

Burger Patties - 3 packs

Polish Sausage Breakfast Sliders - 1 pack

This equals out to seven pounds exactly - the snack sticks will probably be gone in a day, and the rest will easily fit in any size freezer.  The Salami and Summer Sausage can go right in the refrigerator for easy snacking!

Holiday Planning:BBQ Beef Sandwich

BBQ Shredded Beef - 2 packs

Raw Mozzarella Cheese - 1 pack

Wild-Caught Shrimp - 1 bag

Braunschweiger - 2 rolls

Perfect for family that comes and goes during the holidays - our BBQ Beef makes for a great sandwich.  Shrimp cocktail is a favorite during any holiday season and Braunschweiger appetizers will help your health as well!  Shrimp bags store easily in any nook or cranny in your freezer, cheese can stay in the refrigerator and our Braunschweiger is usually gone within a few hours.

Bacon - enough said.  Our chopped meat varieties are versatile enough for breakfast, lunch and dinner and pet burger will please any pooch on a daily basis.

Seven pounds total here with several different easy lunch options!  Pre-cooked shredded beef can be served plain or with your favorite sauce and you'll have some leftover for dinner.
