Baked Shrimp Dish
- 1 lb raw shrimp, cleaned
- 1 lb of feta cheese, crumbled
- 1 lb of plum tomatoes, chopped
- 1/8 cup of olive oil
- 20 basil leaves, chopped basil
- 1/2 lemon
- Preheat oven to 375 degrees.
- Place shrimp in a baking pan. On top of shrimp, place crumbled feta cheese, chopped tomatoes and basil. Pour olive oil over mixture. Squeeze 1/2 lemon on top.
- Bake 12 - 15 minutes. Serve over rice.
