Marinades

Marinades for Beef

Chicago Marinade

Ingredients

1/3 cup extra virgin olive oil
1/3 cup balsamic vinegar
2 cloves garlic
chopped onion
sea salt
fresh pepper
tsp. fresh basil
tsp. fresh oregano

Directions:

Combine all ingredients in a ziploc bag or covered container and add meat, then marinate mixture 8 to 10 hours or overnight turning beef once.


Fruity Marinade

Ingredients

Equal parts: kiwi, papaya & pinapple

Directions:

Combine all ingredients and let meat soak for 30 minutes - 1 hour. This has very strong enzyme properties, which requires vigilance to avoid over tenderizing the finished product.

Classic Meat Marinade

Ingredients

1/3 cup extra virgin olive oil
1/4 cup balsamic vinegar
1 tsp lemon juice
sea salt
fresh pepper

Directions:

Combine all ingredients and let meat soak for at least 30 minutes. Soak overnight for added tenderness and flavor.
