1 cup flour
1 tsp. baking soda
1/4 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. ginger
Pinch of cardamom
Pinch of ground cloves
2 tsp. orange zest
3/4 cup butter, softened
1/2 cup brown sugar, packed
1/2 cup sugar
1 large egg
1 1/2 cups rolled oats
1/2 cup almonds, chopped
3/4 cup gogi berries
2 tsp. fresh orange juice
Toss gogi berries in orange juice and set aside. Preheat oven to 375 degrees F. Beat sugars, butter, and orange zest with a mixer; add egg and continue to beat until well blended.
Sift together flour, baking soda, salt and spices; add to the wet ingredients and mix until incorporated. Mix in rolled oats, gogi berries and almonds with a wooden spoon. Form 1 tbsp dough into balls and place on cookie sheets two inches apart.
Bake 10-12 minutes until edges are golden brown.
Optional: When cookies are cool, melt white chocolate. Dip the cookies in the white chocolate and set on wax paper to cool.
