Memorial Day

Memorial Day has become the unofficial start of summer. It’s the time when barbeques are fired up, lemons are squeezed for lemonade and ice cream trucks make the rounds. The recipes below will help you kick off BBQ season the right way.

 Lamb Kabobs Lamb Kabobs

Ingredients

  • 1 lb. ground lamb
  • 1/2 onion, finely chopped
  • 1/2 tsp. garlic powder
  • 1/2 tsp. seasoning salt
  • 1 tsp. dried parsley
  • Lemon zest
  • 1 egg
  • 2 oz. feta cheese, crumbled

Flat bread

Optional toppings: lettuce, tomato, feta cheese, Greek yogurt, red onion

Mix the first eight ingredients together. Form mixture into ovals and put on skewers. Cook on the grill over medium heat until done. Put lamb on the flat bread and add toppings.

 Beef Kabobs Beef Kabobs

Ingredients

  • 1 lb. beef kabob meat: NY Strip Kabobs
  • or Tenderloin Kabobs
  • 3/4 cup fresh pineapple, cut into very small chunks
  • 1 clove garlic, crushed
  • 1/8 tsp. ginger
  • 1/8 tsp. black pepper

Optional: mushroom, pineapple, cherry tomato, zucchini, onion, peppers

Olive oil
Salt

Add the first five ingredients into a bowl and marinate for about 30 minutes. Discard marinade including the pineapple pieces. Put meat and desired vegetables on skewers. Brush with olive oil and sprinkle with salt. Cook on the grill over medium to low heat until done.

 Steak Medallions with Summer Tomato-Basil Topping Steak Medallions with Summer Tomato-Basil Topping

Ingredients

  • 1.35 lb. Teres Major steak
  • 1 Tbs. olive oil
  • 1 Tbs. balsamic vinegar
  • 2 cloves garlic, crushed
  • 2 Tbs. shallots or onion, chopped
  • Ground black pepper

Remove any connective tissue from the meat. Slice meat into 1” slices. Add all ingredients together and marinate for about 1 hour. Cook over a medium heat until done. Note: The meat will not take very long to cook! Avoid overcooking the meat so it remains moist.

Topping:
1 large tomato
2 oz. gorgonzola cheese, crumbled
1/4 cup fresh basil, sliced
Salt
Pepper

Mix all topping ingredient together. Add topping to steak medallions.
