1 lb. chicken wings
1 egg, beaten
6 Tbsp. grated or finely shredded Parmesan cheese
1 tsp. chopped parsley
1 tsp. oregano
1 tsp. paprika
1/2 tsp. salt
1/4 tsp. pepper
Cut tips from chicken wings and discard. Cut wings in half at joint, making two pieces.
Combine all dry ingredients, including cheese, in a small bowl and mix together.
Place a piece of parchment paper on the bottom of a baking dish. Place a wire rack on top of the paper.
Dip each piece of chicken into the egg and then into the cheese mixture. Put the chicken pieces on top of the rack in the dish.
Bake at 350 degrees for about 30 -35 minutes, until done. Easy clean-up: throw away the parchment paper!
Variation for Crispy Chicken Wings: omit parsley, oregano, and paprika. Add 4 Tbsp. of Italian bread crumbs to the dry ingredients. After dipping in egg and breading mixture, drizzle each wing with a small amount of butter.
