Fresh Chilled Beef FAQs!

Q: What is the difference between frozen and fresh chilled beef?

A: Fresh chilled beef has NEVER been frozen! We offer this for those chefs and customers that prefer the taste of fresh chilled over frozen beef.

Because of the nature of the fresh chilled beef orders, special efforts are taken to ensure only the freshest items are shipped. This involves a delicate balance of specific harvesting, precise production, overnight shipping and extra careful packing.

We have 5 fresh chilled beef packages, which are all labeled as fresh chilled beef; they are the only items that are shipped fresh, not frozen.  All other meat items in our store will be shipped frozen. IMG 1062 resized 600

Q: What cuts do you have available?

A: Roast/burger bundle, steak and burger package, burger bundle, striploin, and gourmet steak package.

Q: How is the fresh chilled beef packaged?

A: The beef cuts are vacuum sealed in a 100% barrier proof cryovac seal just like our frozen beef.  Each pound of ground beef, each steak, each primal and each roast is individually cryovac sealed.

Q: Is the fresh chilled beef aged?

A: Yes, the fresh chilled beef is aged 10-24 days depending on the monthly fresh chilled shipping schedule.

Q: How often does the fresh chilled beef ship?

A: Fresh chilled (never frozen) beef ships out on the second Wednesday of every month. Please have your order placed by 12:00 noon CST on the preceeding Friday to ensure shipment that month.  For the current fresh chilled beef schedule, please refer to the fresh chilled category on our website.  Fresh orders ship on Wednesday via FedEX overnight service and will deliver on the following Thursday.

Q: Does the fresh chilled beef ship with my other frozen items?

A: The fresh chilled beef always ships separately from frozen products, so it does not freeze.

Q: Even though they ship separately, can fresh and frozen items be combined for billing on the same order?

A. Yes! If frozen items are combined on the same order with fresh chilled beef packages, a minimum of 7 pounds of frozen weight is required. This minimum weight will help ensure the frozen items shipped separately arrive in good condition.

Q: How is fresh chilled beef shipped to ensure it stays cool to the touch in transit and will arrive in good condition?

A: Fresh chilled beef is shipped via FedEx overnight service. The weight of each specialty chilled beef package ensures the items stay cool while in transit and will arrive at the proper temperature.

Q: What condition should I expect upon arrival of my fresh chilled beef package?

A: The fresh chilled beef packages have never been frozen.  They are fresh and are meant to arrive cool to the touch, but not frozen. 

Q: What are the storage recommendations for fresh chilled beef?  Can it be frozen?

A: Fresh steaks and fresh roasts will keep in your meat drawer for a week to 10 days at most if temperatures remain at 32-33 degrees. You are simply extending the wet aging time.  Ground beef is good for 5 days at the most.  You will start losing flavor rapidly after that and the product will start spoiling. Please feel free to freeze any fresh selections that will not be enjoyed within this time frame. The fresh items are individually cryovac sealed and may be frozen for a minimum of 6 months.

I love the idea of fresh chilled. I feel that meat that has been frozen never cooks up the same as fresh meat. I thought more about texture, but it makes sense that the flavor would be better as well.

I would definitely love to try this. Having recently relocated 2000 miles across country, we have not yet found a local source for fresh, grassfed beef yet, so you could have a fresh-chilled beef customer for life! ;)

Will grass fed chilled beef last longer than conventionally grown chilled beef? I imagine that the conventional beef might uBersexual some chemicals to lIe it last longer, but it probably has more e coli and other contaminants?

i have never tried fresh chilled meats since I do not foresee to consume a lot of meats within that time frame. I would like to see ducks and real lard on the selections as I want to increase good fat intake as disease prevention.

I'd love to try fresh chilled beef. It might be hard to use it all before it goes bad, though defeating the purpose of never frozen. If I am lucky enough to get to try it, I'll share with neighbors and hope we can all go in on an order in the future so none has to be frozen!

While I like the idea of fresh chilled, as I'm the only one I'm cooking for, I'd have to freeze most of it right away so I don't know that it would wind up being any different than buying it already frozen. Though it does sound tasty! :)

We have been buying our grass-fed meats from another source, and frankly, my husband has not cared for about 90% of it. Some of the meat has had a "fishy" taste and we can't figure out how that is even possible! This meat does come frozen. I am looking forward to trying your fresh-chilled meat and frozen meats, in the hopes my husband will be happy with it. :)

Did I see in one of the photos that the ground beef is 75% lean (therefore 25% fat)? As a Weston A. Price Fndn. member, that would be the minimum percentage of fat I would want. 
 
What is the fat content of the other meats in the roasts/burger bundle?

I have never tried your beef as we get ours from a local farm here, but had some of your ground turkey and it was pretty good. I too was wishing your beef had a higher fat content, however I guess I can just cook it in beef tallow and add raw cheese and an egg over it with avocado? Its lunch time and making me hungry :D

I do find that never frozen meat does tend to taste different from frozen, but I am rarely able to indulge in something like you're offering. I might have to try it! Of course, it's below freezing here, so hopefully the UPS folks won't drop it off too long before I am able to bring it inside!

I've had never-frozen fish, but I don't think I've ever had never-frozen beef! We usually buy our beef by the quarter from a local 100% grass rancher, but the processor freezes it all right away. I'm not sure we could eat a whole bundle before it got to the eat-it-or freeze-it point, but we would love to try!

I don't think I have ever had grass fed beef. I've been subscribed to US Wellness Meats for over a year. Read most of the stories and browse through the items. OK, everything intrigues me. I only eat organic fruit, veg, dairy etc. The only meats I buy are natural, but I'm sure it's not like grass fed. Hope to try the meats soon!

The Fresh chilled gourmet steak package looks very tasty. I've had my eye on it but I have been concerned about being able to eat the whole package without having to freeze part of it. By my calculation the steak package would be 18 servings which means lunch and dinner for 9 days so it can be done and since it is such good tasting meat and good for you it is ok to eat twice a day without boredom setting in. I've never tried to eat that much meat but I would like to try. Of course my boyfriend will probably want some too so it may only be 7 or 8 days of straight meat. Also to change it up maybe I will do steak and eggs for breakfast a few days.

Gerry - Actually all of our beef is 100% grass-fed and grass-finished, there is no grain or starch in their diet at all. Our lamb and bison are also 100% grass-fed and grass-finished.

Aging is critical to a tender, flavorful beef product. We choose to wet—rather than dry—age our meat to prevent moisture loss and unnecessary exposure to pathogens. Wet aging allows for the breakdown of collagen, essential to infusing fat through the meat, without losing valuable moisture as happens during the dry aging process.
