Farmer's Market Flank Steak

Tis the season of farmer's markets! What a great way to find fresh and unique fruits and vegetables (and other goodies) while enjoying the outdoors! In recent years farmer's markets across the U.S. have grown to over 5,000. Our recipe today is in honor of this growing trend!

Farmer's Market Flank Steak

 

  • 1 lb. flank steak
  • 2 Tbsp. balsamic vinegar
  • 1/4 cup cilantro, chopped (or your favorite fresh herb)
  • 1/8 tsp. ground black pepper
Mix all the above marinade ingredients together.  Allow to marinate in the refrigerator for 4 hours or more.

 

  • 3 Tbsp. butter
  • 1 small onion
  • 1 medium green pepper
  • 1 medium eggplant
  • 1 small yellow squash or zucchini
  • 1 1/2 cups cherry tomatoes
  • Salt and pepper, to taste
  • Fresh cilantro, chopped
Heat grill to medium-high heat. Chop onion and green pepper into 1-inch chunks. Chop eggplant and squash into about 1/2-inch chunks. Melt butter in a large skillet. Add vegetables to the skillet, salt and pepper to taste, cook until tender-crisp. Meanwhile, place flank steak on the grill, turning only once, be sure not to overcook. When steak is done, take off grill and allow to rest for a few minutes. Then slice across the grain and serve on top of the veggies.  Sprinkle with fresh cilantro.
