Greek Bison Sliders

  • 1 lb. ground grass-fed bison (or grass-fed lamb)
  • 1/2 cup frozen spinach, thawed and sqeezed dry
  • 1/2 cup feta cheese
  • 1/4 cup kalamata olives, chopped
  • 1/2 tsp. pepper
  • 1 tsp. garlic, chopped
  • 1/2 tsp. dill
  • 1/2 tsp. orgeno
  • Tomato, sliced
  • Red onion, sliced
  • Cucumber, sliced
  • Slider buns*
  • 3/4 cup plain Greek yogurt
  • 1 tsp. lemon zest
  • 2 tsp. lemon juice
  • 1/2 tsp. dill
  • 1/2 tsp. mint
  • salt and pepper, to taste
Preheat grill to medium-high.  In a bowl, mix together: bison, spinach, feta, olives, pepper, garlic, dill, and oregano.  Form into patties.  Place patties on a hot grill, turn only once.  Bison is very lean so it will cook quickly!  Be sure not to overcook!

For the sauce: mix all ingredients and allow to set for at least a 1/2 hour.

*This recipe used gluten-free dinner rolls as slider buns made by Outside The Breadbox.  Their products can be purchased at a lovely little store in Loveland, CO called Granny's Gluten Free Zone.
