Grilled Portobello Mushrooms

When we think of grilling, we usually think of steaks and burgers. But this tasty dish puts a spin on grilling!  Grilled portobello mushrooms, hot off the grill, drizzled with balsamic vinaigrette!

portobello mushrooms, olive oil

  • 4 large portobello mushrooms
  • 4 slices sweet onion
  • 4 slices tomato
  • 1 avocado (sliced, diced, or mashed)
  • 1/2 cup cheese, shredded
  • Balsamic vinaigrette
  • Salt and pepper, to taste
  • Olive oil
Preheat grill to medium.  Brush olive oil on each mushroom and onion; sprinkle with salt and pepper.  Place mushrooms and onions on grill with the mushroom bottoms on the grill.  Grill for about 5 minutes or until partially cooked.  Flip mushrooms over, top with onion, tomato, avocado, and cheese.  Cook until mushrooms are done and cheese is melted.  Take off the grill and drizzle with balsamic vinaigrette.
