Bacon Wrapped Beef Franks with Spicy “Relish”

Ingredients:

Process:

  1. Preheat your grill to medium
  2. While your grill is warming up, take your bamboo skewers and place your beef franks on the skewers
  3. Once stabbed, wrap once slice of bacon around each beef frank and now you are ready to grill
  4. Place your bacon wrapped beef franks on the grill and be sure to be close, bacon is loaded with grease and can cause some serious flare ups if left unattended and you don’t want to char your food
  5. Ensure you turn your franks a few times to evenly cook the bacon
  6. While your beef franks are grilling, take all the remaining ingredients and place them all in a food processor and let it go to town until completely blended like a relish.  You can adjust the taste with all the salt and pepper you like
  7. Pull your beef franks off when the bacon is cooked to your liking and plate, top with some of your Spicy “relish” or just serve on the side.  You can also have the below Fresh Cucumber Salsa as a side

21 Day Sugar Detox Cucumber Salsa

Ingredients:

  • 1 Cucumber, chopped into 1/2 inch cubes
  • 1/2 Red Bell Pepper, finely diced
  • 1-2 Tbsp fresh cilantro, finely chopped
  • 1 Clove of garlic, minced
  • Juice of 1 Lime
  • 1 Tbsp Extra Virgin Olive Oil
  • Salt and Pepper to Taste

Process:

  • Toss all of your ingredients in a bowl
  • Serve chilled aside your grilled beef franks or any delicious summer dish

Fish Tacos

Whether you're a fish-eater or not, you just might enjoy these tacos!  There are some types of fish that I love and others that I don't care for.  Halibut is a fish that I'm very fond of, probably because I like fish to taste like fish but not taste "fishy"!  This recipe allows the flavor of the Halibut to shine through without being masked by other strong flavors.  Alaskan Halibut is a firm white fish with a mild, light flavor that fits may culinary contexts.

  • 2 Alaskan Halibut filets
  • 1 ½ Tbsp. coconut oil
  • 1 Tbsp. cilantro, chopped
  • Salt and pepper, to taste
  • 1 lime, cut into wedges
  • Avocado slices or guacamole
  • Fresh cilantro, for garnish
  • Sprouted grain tortillas or large lettuce leaves
Pico de Gallo
  • ¼ onion, chopped
  • 3 roma tomatoes, chopped
  • ½ green pepper, chopped
  • 1 Tbsp. cilantro, chopped
  • 2 tsp. lime juice
  • Salt and pepper, to taste
Warm the coconut oil and add the cilantro.  Put the fish in a bowl with the coconut oil, marinate for about 20 minutes.  Preheat a grill to a medium heat.  Sprinkle fish with salt and pepper.  Grill fish for a couple of minutes on each side until it’s cooked through and flaky.  Serve with fresh cilantro, avocado, lime wedges, and Pico de Gallo on sprouted tortillas or lettuce leaves.

For the Pico de Gallo:  Mix all ingredients together.  Allow to sit for at least 30 minutes before serving.

Farmer's Market Flank Steak

Tis the season of farmer's markets! What a great way to find fresh and unique fruits and vegetables (and other goodies) while enjoying the outdoors! In recent years farmer's markets across the U.S. have grown to over 5,000. Our recipe today is in honor of this growing trend!

Farmer's Market Flank Steak

 

  • 1 lb. flank steak
  • 2 Tbsp. balsamic vinegar
  • 1/4 cup cilantro, chopped (or your favorite fresh herb)
  • 1/8 tsp. ground black pepper
Mix all the above marinade ingredients together.  Allow to marinate in the refrigerator for 4 hours or more.

 

  • 3 Tbsp. butter
  • 1 small onion
  • 1 medium green pepper
  • 1 medium eggplant
  • 1 small yellow squash or zucchini
  • 1 1/2 cups cherry tomatoes
  • Salt and pepper, to taste
  • Fresh cilantro, chopped
Heat grill to medium-high heat. Chop onion and green pepper into 1-inch chunks. Chop eggplant and squash into about 1/2-inch chunks. Melt butter in a large skillet. Add vegetables to the skillet, salt and pepper to taste, cook until tender-crisp. Meanwhile, place flank steak on the grill, turning only once, be sure not to overcook. When steak is done, take off grill and allow to rest for a few minutes. Then slice across the grain and serve on top of the veggies.  Sprinkle with fresh cilantro.

Greek Bison Sliders

  • 1 lb. ground grass-fed bison (or grass-fed lamb)
  • 1/2 cup frozen spinach, thawed and sqeezed dry
  • 1/2 cup feta cheese
  • 1/4 cup kalamata olives, chopped
  • 1/2 tsp. pepper
  • 1 tsp. garlic, chopped
  • 1/2 tsp. dill
  • 1/2 tsp. orgeno
  • Tomato, sliced
  • Red onion, sliced
  • Cucumber, sliced
  • Slider buns*
Sauce:
  • 3/4 cup plain Greek yogurt
  • 1 tsp. lemon zest
  • 2 tsp. lemon juice
  • 1/2 tsp. dill
  • 1/2 tsp. mint
  • salt and pepper, to taste
Preheat grill to medium-high.  In a bowl, mix together: bison, spinach, feta, olives, pepper, garlic, dill, and oregano.  Form into patties.  Place patties on a hot grill, turn only once.  Bison is very lean so it will cook quickly!  Be sure not to overcook!

For the sauce: mix all ingredients and allow to set for at least a 1/2 hour.

*This recipe used gluten-free dinner rolls as slider buns made by Outside The Breadbox.  Their products can be purchased at a lovely little store in Loveland, CO called Granny's Gluten Free Zone.

Grilled Portobello Mushrooms

When we think of grilling, we usually think of steaks and burgers. But this tasty dish puts a spin on grilling!  Grilled portobello mushrooms, hot off the grill, drizzled with balsamic vinaigrette!

  • 4 large portobello mushrooms
  • 4 slices sweet onion
  • 4 slices tomato
  • 1 avocado (sliced, diced, or mashed)
  • 1/2 cup cheese, shredded
  • Balsamic vinaigrette
  • Salt and pepper, to taste
  • Olive oil
Preheat grill to medium.  Brush olive oil on each mushroom and onion; sprinkle with salt and pepper.  Place mushrooms and onions on grill with the mushroom bottoms on the grill.  Grill for about 5 minutes or until partially cooked.  Flip mushrooms over, top with onion, tomato, avocado, and cheese.  Cook until mushrooms are done and cheese is melted.  Take off the grill and drizzle with balsamic vinaigrette.

Stuffed Turkey Burgers

Cranberry-stuffed turkey burgers, chicken burgers

Try these burgers made with ground turkey or chicken and stuffed with cranberries, orange zest, and cheese.

In a medium bowl, mix together first five ingredients.  In a small bowl, mix together last three ingredients.  Divide the turkey mixture into six or eight equal portions, if you want three burgers divide the meat into six portions, for four burgers divide the meat into eight portions.  Flatten the meat portions into patties.  Top half of the patties with the cranberry mixture.  Top the cranberry mixture with the remaining patties.  Press around edges to seal.

Cook in a preheated skillet or on the grill over a medium heat until no longer pink.

Serving suggestions: toasted buns*, grilled or sauted onions, and/or lactofermented mayo.

Hint: wet hands before making the patties to prevent the meat from sticking to your hands.

Memorial Day Show on Fox & Friends

 

What a great day in the world of grass-fed!  Yesterday, John had the privilege of appearing on Fox & Friends to talk about the benefits of grass-fed meat.  What an excellent opportunity to educate people!  Unfortunately, the grilling portion of the segment was rained out but we're still thrilled to have been on the show!
